Field Preparation and Inspection

When preparing roadkill game for storage, the first step is to inspect the animal for any signs of disease or injury. Check for open wounds, signs of putrefaction, or unusual odors. If the animal appears to be in good condition, field dress it immediately, following proper techniques for the species. For example, for deer, make a shallow incision along the belly and remove the organs, taking care not to puncture the intestines. For larger game, such as elk or moose, make a deeper incision and remove the organs, including the liver, lungs, heart, and stomach.

Curing and Freezing

Once the animal is field dressed, cure the meat by applying a mixture of salt, sugar, and pink curing salt (optional), making sure to cover all surfaces evenly.
