Field Dressing Aoudad

Field dressing an aoudad is a critical step in preserving the quality of the meat. Start by making a shallow incision in the skin, just below the anus, and continue the cut up to the base of the neck. Be careful not to puncture the abdominal cavity, as this can cause contamination. Next, make a second incision from the anus to the base of the throat, taking care to avoid the esophagus and any major blood vessels. Continue to make small cuts around the anus and genital area to release any entrails. Remove the entrails and organs, taking care to preserve the meat. Finally, make a series of small cuts along the length of the spine to release any remaining blood and fluids.
